It is very possible to upgrade from 10 x 1-3/4" to 10 x 2-1/4" braking assemblies. The brake mounting flange will be the same standard four bolt pattern for both of these options which means everything would be a direct bolt-on swap but the downside of this is that you must also replace the hub/drum as well since the braking assemblies are different sizes. Nitrogen itself will not cause a trailer tire to run any cooler than a trailer tire filled with standard air, the only thing it will do is stay at a more stable pressure and volume to keep the tire properly inflated which can cause the tire to run cooler.

You are better off with what is called an over/under kit, the Dexter Trailer Springs Over-Under Conversion Kit # K71-384-00.
The # K71-384-00 lifts your trailer approximately the same amount as your axle's diameter plus the height of the leaf spring pack, so you'll have more room. Then, you can go to a larger tire and wheel, the Karrier ST205/75R14 Radial Trailer Tire with 14" White Wheel # AM32153.
